This month there are wealth of delights which become available and Scotland’s climate is perfect for these, chanterelles mushrooms are plentiful and flavoursome, wild herbs like borage, wood sorrel and lovage can add rich flavours and textures to salads and compliment fish, meat and game.
Pigeons are at their best, as they have plumped up on the farmers crops and the first game of the season will be available with grouse on the ‘Glorious Twelfth’ Scottish game is loved and appreciated across the world for its fullness of flavour.
Stone fruits like damsons, plums and green gauges are all at their best and the dark rich brambles and blackberries are bursting with sweetness from the slow ripening of our summer sun.
