Whisky - Food
For more than a decade Classic Malts Selection single malt whiskies have been paired with food; an exciting exploration of taste pursued with the importance of keeping the food simple in order to achieve the most harmonious pairings of individual malts with selected dishes.
The old assumption that wine is the automatic accompaniment to good food can no longer be justified, most notably with Indian and Far Eastern dishes but also with many cheeses and charcutiere.
CAOL ILA 12 YEAR OLD
Islay’s hidden malt, lighter and more subtle than other Islay whiskies and highly prized by connoisseurs. It brings a light, fragrant smokiness and a smooth, pleasant mouth feel. Adding water reveals a light acidity, salt and sweetness and a complex balance of primary tastes.
Paired with Kyle of Tongue Oyster
Scotland has the reputation for some of the finest rock or Pacific oysters in Europe. The combination of their briny intense taste and this Islay malt is a revelation and gives the lie to the old wives’ tale that whisky should never be drunk with oysters.

DALWHINNIE 15 YEAR OLD
Heather honey sweetness and underpinning vanilla from the famous Highland distillery make the perfect malt to accompany desserts or blue cheese. Served straight from the freezer, the full aromatic qualities are gradually revealed as it warms in the glass.
Paired with Humphrey Errington’s Blue Cheese
Humphrey has been at the very forefront of establishing artisanal Scottish cheeses and is most well known for his blue cheeses, Lanark and Dunsyre, depending on the milking season. Both cheeses work well but, the Dunsyre, with its slightly less aggressive flavour, works miraculously well with the frozen whisky.

A special edition blend from whiskies that are at least 45 years old and are predominantly from distilleries that no longer exist. It was made in 2005 to celebrate the birth of John Walker on 25 July 1805, and Johnnie Walker released just 200 bottles to present as gifts to high-profile individuals renowned for making a significant contribution to modern life. Taste, and the impression is of early autumn: ripe fruits, plums, hints of moss and fallen leaves with light smoke gently threading its way through the fruits. All the flavours are held within a smooth and amazingly mature texture, which lingers after the last drop has been swallowed. A truly exceptional whisky.
