Gleneagles for the Gourmet

<< Back to Media Information

Gleneagles has an international reputation for the excellence and variety of the dishes prepared in the hotel's kitchens, which benefit from the finest, freshest produce available from Scotland's larder and from specialist suppliers around the world. Gleneagles is also highly regarded for the depth and range of the hotel's wine cellar and for the quality of service in the resort's four restaurants, the Michelin starred Andrew Fairlie @ Gleneagles the Strathearn and Conservatory, The Dormy Clubhouse and Deseo, a 'Mediterranean Food Market' Restaurant.

Alan Hill, Food and Beverage Director, holds many internationally recognised awards and is a Member of the Académie Culinaire de France.

Alan Gibb, Gleneagles head chef, has a kitchen brigade of more than 50 chefs.

Andrew Fairlie, creates signature dishes where every detail has been carefully planned to create a truly special experience - from the leather of the menus and innovative original art on the walls through to the specially selected French cheeses and Scottish-grown herbs.

In classic French style, the Gleneagles kitchen is built on six sections, or 'parties' - Fish, Hors d'oeuvres, Larder, Pastry, Sauce and Vegetables. Each section has four to six chefs. There are also chefs dedicated to the Deseo and The Dormy Clubhouse Restaurants. Overnight, a mini-brigade of three chefs attend to guests' requests for room service and prepare breakfast.

Gleneagles spends £5 million each year purchasing the freshest Scottish produce, including game from neighbouring estates, Black Angus beef from Aberdeenshire, Border lamb and Scottish salmon.

The hotel's sommeliers share an encyclopaedic knowledge of the fine wines laid down in the Gleneagles' cellars. Guests can chose from more than 400 bins from most wine producing countries.

The resort has three bars where guests can relax and enjoy an extensive range of beverages, including Scotland's Six Classic Malts and the exclusive Gleneagles' cocktails.

Gleneagles does not enforce a dress code in any of its restaurants and bars.
