This menu is suitable for up to 20 people and gives you a full choice of the menu on the evening for your guests

Starters

The Gleneagles smoked Scottish salmons expertly carved in your room - there is a choice of two salmons

White onion and spring watercress soup served with garlic croutons and crème fraiche

Seared goose liver and caramelised apple placed apon a rhubarb and ginger chutney with sauternes wine sauce

British new season asparagus with a free range poached hen egg, truffle vinaigrette and spring garden salad and herbs

Main Courses

Seared fillet of halibut on a herb risotto cake, roast fennel and a rich red wine butter sauce

Daily roast served from the trolley the chef’s chosen roast of the day, carved in the room

Grilled goats cheese and wild mushroom pithiviers served with a confit of parsnip, vine grown tomatoes and flat leaf parsley dressing

Poached corn fed chicken with Scottish prawns, cocotte potatoes, new season leeks, basil and broad bean stew

Desserts, puddings and cheese

Valrhona dark chocolate cake
with Amarena cherries and Chantilly cream

Clotted cream rice conde chilled rice pudding lighted with sweetened cream and served with vanilla infused strawberries

Iced caramel parfait with poached William pear, pistachio wafers and lime syrup
